Really Flaky (in a good way) Scones

Dear Turkey,

I like scones that aren't
Too sweet; that way you can taste
What you put in them


Really Flaky (in a good way) Scones
(makes 8, loosely adapted from Bobby Flay)

Ingredients:
- 2 c white flour
- 1/4 c brown sugar
- 1 t cinnamon
- 1/2 t ground ginger
- 1 t baking powder
- 1/2 t baking soda
- pinch salt
- 1 stick butter, frozen
- 1/3 c buttermilk
- 1/3 c heavy cream
- 1 t vanilla
- 1/3 c chocolate chips or, what I used: cacao nibs from Taza Chocolate

Instructions:
- Stir up the dry ingredients. 
- Add the butter, buttermilk, cream, and vanilla and, using a pastry cutter/fork/knife/hands/whatever, chop everything until the butter chunks are about blueberry-sized. 
- Add the chocolate and knead with your hands just two or three times until a ball starts to form. If there is extra flour mixture in the bottom of the bowl, don't worry; you don't want to overwork this dough (hence the flaky).
- Cover a baking stone or cookie sheet with parchment paper and use your hands to flatten the dough into a disk about 3/4 of an inch thick. If there is extra flour in your bowl, just sprinkle it over the top (even if it's a lot), and flatten it with your hands a bit.
- Slice the disk into 8 pie-slices and spread them apart just a little.
- Bake at 375 F for 25 mins.
