This awesome dinner
Leftover Cabbage Pad Thai Hack
(serves 3)
Ingredients:
- 2 c flat bean or rice noodles, cooked and tossed with some sesame oil (or just use regular spaghetti if that's what you have)
- 4 c shredded cabbage or cole slaw mix
- 1/2 onion, chopped
- 1 c snow peas (or whatever veggies you have)
- 3-4 T peanut butter (I used smooth all-natural)
- 3-4 T brown sugar
- 3-4 T rice vinegar
- 2-3 T lemon juice (jarred is fine)
- 2-3 T tamari
- 2-3 T sesame oil
- 1/2 t ground ginger
- 1/2 t garlic powder
- 1/2 t salt and pepper, or to taste
Instructions:
- Heat the onion and the sesame oil in a big pan, add the cabbage and cook, stirring often, until cabbage starts to brown, about 5-10 minutes. I tried to cook this as dry as I could, in order to get good browning. You may need to add more oil depending on what kind of pot you're using and how much water is in your veggies.
- Stir in the cooked noodles and the remaining ingredients except for the snow peas. Heat through and adjust seasonings to taste.
- Remove from heat and stir in the snow peas. Top with sriracha.
