Winter Comfort Food Beans and Rice

Dear Turkey,

Get out a few cans,
Add some dried spices and bulbs:
A nice winter meal


Winter Comfort Food Beans and Rice
(serves 4)

Ingredients: 
- 3 T olive oil
- 3 cloves garlic, peeled and smashed up a bit
- 2 shallots, peeled and chopped
- 3 T honey
- 3 T balsamic vinegar
- 1 T lemon juice (jarred is fine)
- 1 T cumin
- 1 T dried oregano
- 1 T chili powder
- dash pepper
- 1 can adzuki beans, rinsed well and drained
- 1 can chick peas, rinsed well and drained 
- 1 tiny can sliced black olives, rinsed and drained
- 1 tiny can tomato paste

Instructions:
- Combine the first 10 ingredients in a pot and cook, stirring, until the garlic and shallots start to brown, about 5 minutes.
- Add the remaining ingredients and simmer, stirring often, for about 10 minutes. The adzuki beans and tomato paste will form a nice, smooth sauce. Season to taste.
- Serve with wild rice, salsa, and grated cheese.
