Fun and Easy (and Healthy!) Marble Cake

Dear Turkey,

This is not too sweet
You can eat it for breakfast
And also, it's fun

Fun and Easy (and Healthy!) Marble Cake
(adapted from here)

Ingredients:
- 1 c white flour
- 1/2 c whole wheat flour
- 1/4 c sugar
- 1 t baking soda
- 1/2 t salt
- 1 c + 1 T milk, divided (I used soy unsweetened)
- 1/4 c oil (I used canola)
- 1/4 c maple syrup
- 1 T vanilla (this makes it pretty vanilla-y, so, if you don't like that, use a teaspoon)
- 1 T cider vinegar
- 3 T unsweetened cocoa powder

Instructions:
- In a large bowl, mix the first 5 ingredients. Make a well in these ingredients and add 1 c of the milk, the oil, syrup, vanilla, and vinegar. Use a whisk to mix until just combined. A few small lumps are okay.
- Oil a loaf pan and spoon out about half of the batter into it. Then add the cocoa and remaining milk to the rest of the batter. Pour this on top of the vanilla batter and gently swirl with a spoon. If most of the vanilla batter remains on the bottom, it's fine.
- Bake at 350 F for about 40 minutes, until a knife comes out clean and the edges of the cake start to pull away from the pan. Cool completely. Also, this cake will be better on day two.

Enjoy,
Tofu
