Life-Changing Pea Soup
(serves 3, adapted from here)
Ingredients:
- 2 T olive oil
- 1 T butter
- 1 onion, chopped
- 1 clove garlic, minced (jarred is fine)
- 1 t salt
- 1 t pepper
- 5 c frozen peas
- 3/4 c chopped fresh basil
- 2 c veggie broth (I used Better than Bouillon)
- 2 c heavy cream
- garnishes: fresh mozzarella, roasted red peppers and/or roasted tomatoes
Instructions:
- Heat the first 6 ingredients in a big soup pot. Cook, stirring, for about 5 minutes, until the onions are just starting to brown.
- Add the next 4 ingredients and heat just until hot; try not to really boil it. Puree. Bring to serving temperature. Season to taste.
- Top with thin slices of the garnishes.
