The Real Red Velvet Cake

Cupcake Wars to know that most
Of the time, it's fake


The Real Red Velvet Cake
(title and recipe shamelessly barely-adapted from Smitten Kitchen)

For the cake:

Ingredients:
- 6 T unsalted butter, room temp
- 3/4 c brown sugar
- 1/4 c sugar
- 1 egg + 1 yolk
- 3/4 c red wine
- 1 t vanilla
- 1/2 c cocoa
- 1 c + 1 T flour
- 1/8 t baking soda
- 1/2 t baking powder
- 1/4 t salt
- 1/4 t cinnamon

Instructions:
- Cream the first 4 ingredients with an electric mixer. Beat in the wine; the batter may curdle a bit. Fold in dry ingredients.
- Butter a pie tin like it's your job. Dust it with a little flour. Pour the batter in and bake at 325 F for 25 minutes. Cool at least 15 minutes and gently remove from the pie tin.

For the frosting:

Ingredients:
- 1/2 c mascarpone
- 1/2 c heavy cream
- 2 T sugar
- 1/2 t vanilla

Instructions:
- Beat with an electric mixer until soft peaks form. Dollop/spread on the cake once it has cooled. Sprinkle with cinnamon or top with berries.
