Delicious and Healthy Berry Loaf

Dear Turkey,

Sometimes I'm bored with
Banana and pumpkin bread
Over and over


Delicious and Healthy Berry Loaf
(makes 2 loaves)

Ingredients:
- 1 scant c sugar
- 4 c whole wheat flour
- 1 T baking powder
- 1 t salt
- 2 c milk (I used soy unsweetened), you can also use 1 c milk and 1 c water
- 1/2 c canola oil (although extra-virgin olive oil could also be good here)
- 4 T flax or chia seeds, whole or ground
- 3 c frozen berries (don't thaw!), I used mixed berries

Instructions:
- Combine dry ingredients and stir in remaining ingredients. Don't overmix. Add more flour or milk if you need to, but I wouldn't mess with it as long as everything comes together; the berries will thaw while baking and add a lot of liquid.
- Divide the batter between 2 oiled loaf pans. 
- Bake at 350 F for 55 minutes, or until a knife come out clean. Cool completely. This freezes well.
