Quick Pickled Red Onions

Dear Turkey,

On your rice and beans,
Or on pasta or salad,
Or just in your mouth


Quick Pickled Red Onions

Ingredients:
- 1 large red onion
- 1/2 t sugar
- 1/2 t salt
- 1-3 c vinegar (I used cider, but any kind will work, although regular distilled might be too strong)
- 5 peppercorns

Instructions:
- Slice the onion into thin rings. Boil a kettle full of water (at least a couple of cups). Place the onions into a colander and slowly pour the boiling water over them to blanch them (I learned this on the internet and I highly recommend not skipping this step).
- Put the onions, sugar, salt, and peppercorns into a quart jar or a container that will make a decent seal. Cover with vinegar, stir or shake a little if you can, and store in the fridge for up to a couple of weeks. Make these at least 30 minutes before you plan to eat them the first time.
