Steph's Life-Changing Pasta

Make you this pasta


Steph's Life-Changing Pasta
(serves 5, adapted from Smitten Kitchen)

Ingredients:
- 1 lb pasta, a thick kind, like orecchiette
- 1 lb broccoli rabe or another nice, meaty green, heavy stems removed
- 1/2 c olive oil
- 5 cloves garlic (I used jarred -- don't tell)
- 1/2 t red pepper flakes, or to taste
- 1 T kosher salt (if you use iodized, the garlic will turn it green, just saying...)
- parm, for topping

Instructions:
- Cook your pasta in a nice big pot of salty water. In the meantime, wash your greens and chop them to about 1-inch pieces.
- When your pasta is a few minutes away from done, throw in the greens and let them wilt/cook until tender. Drain.
- While draining, heat the oil, salt, red pepper flakes, and garlic and cook for a few minutes until the garlic starts to brown. Don't walk away. 
- Return the pasta to the pot and stir to coat. Let stand for a minute or two. Serve with parm and more red pepper flakes.
