No Frying and Minimal Chopping Tomato Farro

No Frying and Minimal Chopping Tomato Farro
(serves 4, adapted from smitten kitchen)

Ingredients:
- 2 c water
- 1 c uncooked farro (I suggest pearled or semi-pearled, unless you have lots of time) or pearled barley
- 2 shallots, chopped
- 2 T minced garlic (jarred is fine)
- 1 can diced tomatoes (do not drain)
- salt and pepper, to taste
- 1 T olive oil
- parm, red pepper flakes, lemon juice, olive oil, and fresh herbs, for garnish

Instructions:
- Combine the farro and water in a pot and let the farro soak while you add everything else to the pot except for the garnishes. 
- Bring to a boil and simmer, uncovered, stirring occasionally, for 10-30 minutes, or until your grains are tender (this will depend on your grain of choice) -- add more water if things are looking like they might stick and burn. Let stand 5 minutes.
- After you plate the farro, stir in plenty of fresh herbs (I used basil, cilantro, and oregano), and sprinkle with parm and red pepper flakes. Add more salt and pepper if you want, and finish by drizzling some lemon juice and some more olive oil on top.
