One Pot Lentils, Potatoes, and Veggies Magic

One Pot Lentils, Potatoes, and Veggies Magic
(serves 5, adapted from here)

Ingredients:
- 3 large leeks, chopped
- 1 large carrot, chopped
- 3 medium potatoes, chopped
- 1 red pepper, chopped
- 1 T minced garlic (jarred is fine)
- 1 T rosemary (dried is fine)
- 3 T olive oil
- salt and pepper
- 1/2 c white wine
- 1 can diced tomatoes 
- 1 tiny can tomato paste
- 2 c veggie broth (I used Better than Bouillon)
- 16 oz dried red lentils 
- 2 c asiago cheese (if you're vegan, use panko)

Instructions:
- In a large oven-safe pot or pan (I used cast-iron), combine the first 8 ingredients and saute until everything starts to get a little brown, about 5-10 minutes. Stir often and add more oil if you need it.
- Pour in the wine and deglaze the pan. Add the tomatoes (the juice too), tomato paste, broth, and the lentils and stir well. 
- Place the pan in the oven and bake at 350 F for 25-30 minutes or until the potatoes are tender. Sprinkle the cheese on top and broil for about 5 minutes, or until the cheese starts to brown.
