Pumpkin Chocolate Chip Maple Bars

Dear Turkey,

A pancake meets a
Brownie, but in a really
Tasty and fun way


Pumpkin Chocolate Chip Maple Bars
(makes 24, adapted from here)

Ingredients:
- 3 c flour (I used white)
- 3 t baking powder
- 2 t pumpkin pie spice (optional -- it's really good without, too)
- 1/2 c chocolate chips (I used mini)
- 1 can pumpkin puree
- 1 t cider vinegar
- 1 c maple syrup (feel free to substitute some corn syrup if you're poor, like me -- nobody will know)
- 2 t vanilla
- 4 T coconut oil, very soft or melted 

Instructions:
- Stir together dry ingredients and then stir in wet ingredients, followed by chocolate chips. 
- Oil a 9x13 inch pan with some coconut oil and spread the mixture inside.
- Bake at 350 F for 35 minutes, or until a knife comes out clean and the middle springs back a little when pressed. Cool completely and slice.
