Don't Stop Reading: The Best Chickpea Cookies!

I know what you think!
But I've fed these to people
And they have no clue


Don't Stop Reading: The Best Chickpea Cookies
(makes 20)

Ingredients:
- 1 can chickpeas, small white beans, or other white beans, rinsed and drained very well
- 1/2 c oatmeal, any kind
- 1/2-3/4 c brown sugar (3/4 c makes them pretty sweet, but it also erases any chance of there being a bean taste in the cookies)
- 3 T coconut oil, solid or melted
- 1 T vanilla extract
- 1/2 t baking soda 
- 1 t cider vinegar
- 3/4 c chocolate chips

Instructions:
- In your food processor, process all of the ingredients except the chocolate chips until the mixture is smooth. If you want to eliminate the chance of having little bits of oatmeal (which don't bother me), whir the oatmeal first until smooth before you add anything else. Add the chocolate chips and pulse until combined. If they get chopped a bit, no worries.
- Cover two baking sheets with parchment paper and spoon 10 cookies onto each sheet. The dough will be pretty soft, almost like a batter. 
- Bake at 350 F for 20 minutes. The cookies may start to crack on top. 
- Cool completely and store in the freezer -- this keeps them from getting really soft.
