Use Up Your Yogurt Vegan Panna Cotta

Use Up Your Yogurt Vegan Panna Cotta
(makes 8 servings:

Ingredients:
- 2 c milk, any kind, including coconut from a can
- 2 c yogurt, any kind, nondairy will work (or you can use 4 c milk and omit the yogurt)
- 4 T agar agar flakes (if you have the powder, check the package for ratios and amounts)
- 2-4 T alcohol, optional, I used grand marnier
- 2-4 T sugar, honey, or maple syrup, optional (this will depend on if you're working with sweetened ingredients)

- Instructions:
- Bring the milk, agar agar, alcohol, and sugar, if using, to a full boil, stirring often. Simmer, stirring, for 5 minutes, making sure that bubbles are coming to the top the whole time (agar agar needs to boil and cook to be activated). 
- Stir in the yogurt and adjust sweetener as needed (you can also make it unsweetened and use a sweet topping, like jam or maple syrup).
- Generously oil a muffin tin with a neutral oil. Pour/ladle the mixture into as many muffin cups as you want (depending on how big you want them). Cover and chill for at least 30 minutes. 
- At this point, you should be able to run a knife around them and pop them out of the muffin tin. Top with fruit, maple syrup, balsamic reduction, whatever you want. Store in the fridge.
