Brussels Sprouts and Lemon Pizza

Dear Turkey,

A different pizza
That lives up to being more
Than just a gimmick


Brussels Sprouts and Lemon Pizza
(serves 2 as a meal, 4 as a side, adapted from Martha Stewart)

Ingredients:

For the dough:
- 1/2 batch store bought pizza dough, or:
- 1.5 c flour
- 1/2 c warm water
- 1 t yeast
- 1 t salt
- 1 t oil
- 1 t sugar

For the pizza:
- 1 t olive oil
- about 1/3 c grated pecorino romano cheese
- about 1/4 c sliced fresh mozzarella 
- 1-2 c loosely packed Brussels sprout leaves
- 1 small lemon sliced very thin
- salt and pepper

Instructions:
- For the dough: combine all ingredients (try not to let the yeast touch the salt directly) and knead with your hands until a ball forms, and then for another minute or two. Let rest at least half an hour and up to a few hours, covered, at room temperature. Roll out or spread out to form a pizza shape.
- Generously oil a cast-iron pan and place the pizza dough in it. Spread some olive oil on the dough, followed by the mozzarella, pecorino, sprouts, and lemon slices. Drizzle with more olive oil and sprinkle generously with salt and pepper.
- Cook on the stove on med/high for about 5 minutes, or until the bottom starts to brown. Then bake in a 500 F oven until the sprouts start to char and the dough is cooked through. This took me about 10 minutes and then I finished it under the broiler for about 2 minutes. You could also skip both the stove and the oven and cook it on the grill.
