Easy Baked Wontons

Dear Turkey,

I searched my blog and
I couldn't believe there were
No wontons on here


Easy Baked Wontons
(makes 60 wontons)

Ingredients:
- 1 pkg of 60 wonton wrappers
- 2 c rainbow slaw (carrots, broccoli and cabbage)
- 2 scallions, cut up small
- 1/4 c cilantro, cut up small
- 2 c wild mushrooms, chopped
- 1 lb extra firm tofu, cubed
- 1/4 c lime juice (bottled is fine)
- 3 T tamari
- 2 t chili oil
- 2 T honey 
- gyoza sauce or whatever sauce you want, for dipping

Instructions:
- Combine the slaw, scallions, cilantro, mushrooms, and tofu. Chop with a pastry cutter to make small pieces for easier stuffing. 
- Drizzle with lime juice, tamari, chili oil, and honey. Toss and season to taste.
- Drop about 2-3 t of filling into each wonton wrapper one at a time, sealing the top like a purse or folding it like an envelope with wet fingers. You might have filling left over at the end, which you can stir fry later. 
- Arrange the wontons on parchment-covered baking sheets and bake at 375 F for about 10 minutes, or until crispy.
- Serve w/dipping sauce. These keep well in the fridge for a day or two.
