No Added Sugar Vegan Pumpkin Spice Chocolate Chip Scones

Dear Turkey,

I've never baked with
Stevia, so I figured
I should try it out


No Added Sugar Vegan Pumpkin Spice Chocolate Chip Scones
(makes 16, adapted from here)

Ingredients:
- 1 can pumpkin
- 1/2 c or one 4 oz container unsweetened applesauce or (banana puree)
- 4 c white whole wheat flour (or your favorite flour)
- 2 t vanilla
- 1/3 c solid coconut oil
- 1 t salt
- 2 T baking powder
- 2 T pumpkin pie spice
- 1 c carob chips, chocolate chips of your choice, or currants
- 1 c milk of your choice (I used soy unsweetened)
- 2 T stevia powder (or just use 1 T, it's expensive!), optional (you can replace it with sugar or just skip it)

Instructions:
- With your hands, knead until the dough comes together, adding more milk or flour if necessary. It's going to be on the batter side of doughy, but you want it to hold together when you plop it out into balls later. Try to have pea-sized or smaller lumps of coconut oil.
- Cover 2 baking sheets with parchment and make 8 balls/lumps/disks/whatever of dough on each one.
- Bake at 425 F for 15-18 minutes, or until the tops feel firm and are just starting to brown.
- These freeze well.
