Chocolate Dutch Baby

Dear Turkey,

It's a pancake, but
Also kind of a cake and 
Maybe a brownie?


Chocolate Dutch Baby
(serves 2-3 as breakfast, 3-4 as dessert, adapted from smitten kitchen)

Ingredients:
- 4 eggs
- 2 T sugar
- generous pinch salt
- 6 T flour
- 3 T cocoa
- 1/2 c milk (I used oat unsweetened)
- 4 T butter
- for toppings: fruit, powdered sugar, shaved chocolate, cocoa, maple syrup, whipped cream (preferable homemade), whatever you want

Instructions:
- If you have an oven-safe pan (about 12-inch diameter, with sides a few inches high), heat the butter in the pan on the stove and swirl it all around the sides and bottom when it's melted. If not, melt the butter in the microwave and swirl it around an oven-safe dish.
- Whisk together all other ingredients except toppings. It's okay if there are some lumps. Pour the batter into the buttered pan.
- Bake at 425 F for 15-20 minutes, or until it's feeling firm on top but also some big bubbles are starting to inflate, and the edges might be inflating a bit as well and coming away from the sides. It will mostly deflate when it comes out of the oven, but no worries.
- Top and serve.
