The cream cheese frosting
Frosted Pumpkin Muffins
(makes 24)
For the muffins:
Ingredients:
- 3.5 c whole wheat flour
- 2 T baking powder
- 1 t baking soda
- 1 c sugar
- 1 c canola oil
- 1 c milk of your choice (I used soy unsweetened)
- 1 regular-size can pumpkin
- 1 t salt
- 1 t vanilla
Instructions:
- Put all ingredients in a big bowl and mix until just combined.
- Spoon into 24 muffin paper-lined muffin cups.
- Bake at 350 degrees for 18-20 mins.
For the frosting:
Ingredients:
- 16 oz cream cheese, room temp (despite what I said in my haiku, you could easily make this vegan using vegan cream cheese and butter, oh, and sugar instead of honey)
- 1 stick butter, melted
- 2 t vanilla
- 8 T honey
Instructions:
- While butter is still warm, whisk all ingredients until smooth.
- Spread onto cooled muffins.
