Peanut Butter Breakfast Cookies
(makes many)
Ingredients:
- 3 c peanut butter, any kind, soft (if you're not sure, microwave it for 30 seconds)
- 4.5 c whole wheat flour
- 2 t baking soda
- 2 t salt
- 3 c maple syrup (or another liquid sweetener)
- 4 t vanilla
Instructions:
- Mix all ingredients, starting with about 3 c of flour. If your peanut butter is pretty soft and creamy, you will be able to incorporate all 4.5 c, but just stop whenever the dough becomes hard to work.
- Line 3 or 4 cookie sheets with parchment paper and spoon 10-12 cookies on each sheet.
- Bake at 375 degrees for 10-12 minutes. The cookies will continue to firm up after you take them out of the oven. Don't place the cookie sheets too close to the heat source in your oven or the bottoms will brown fast.
