Keeps giving you stuff
Use Up Your CSA Broccoli Slaw
(serves 4)
Ingredients:
- 1 large broccoli crown
- 2 tomatoes
- 1 cuke
- 1/4 c beet greens or whatever greens you're trying to get rid of (even pretty tough ones as they will be pickled)
- 1/8 c red onion
- 1 T lemon juice
- 2 T distilled vinegar
- 2 T red wine vinegar
- 1 t salt
- 2-3 T sugar (taste it after 2 T)
Instructions:
- Chop all veggies bite size and combine in a big bowl.
- Stir together remaining ingredients in a small bowl, adding more sugar to taste.
- Pour dressing over veggies and let stand at room temperature for a few hours, stirring occasionally. You'll be amazed at how much the veggies shrink, a plus if your fridge is full of veggies.
- Serve just plain, on in a wrap, or as part of pasta salad.
