Apple Clafoutis

Dear Turkey,

This is a grown up
dessert. And maybe a grown
Up breakfast, also. 


Apple Clafoutis
(adapted from The New York Times)

Ingredients:
- 4 apples, sliced with the skin on
- 1 T lemon juice
- 2 T butter
- 2 T brown sugar
- 1/2 t cinnamon
- 3 eggs
- 1 t vanilla
- 1/3 c sugar
- generous pinch salt
- 2/3 c flour
- 1/2 c yogurt (I used full fat plain)
- 3/4 c milk of your choice (I used soy unsweetened)

Instructions:
- In a cast iron pan that doesn't taste like onions, heat the first 5 ingredients and cook on low heat, stirring, for about 10 minutes, until everything starts to caramelize. (If you don't have a cast iron pan, or one that doesn't taste like onions, just use a regular pan and transfer everything to a cake pan or pie dish before baking.)
- Meanwhile, whisk the remaining ingredients together. Try to really whip some air into it, but don't get tired.
- Pour the egg mixture over the apples and (carefully!) put the pan in a 375 degree oven. 
- Bake for 40 minutes or until the top starts to brown and the cake pulls away from the edges of the pan just a bit. Cool completely.
