Healthier Chocolate M&M Cookies
(makes about 24)
Ingredients:
- 2 sticks butter (or vegan butter), soft
- 2 T chia seeds (or flax seeds) soaked in 1/2 c warm water for a couple minutes
- 1 c brown sugar
- 1 t vanilla
- 1 t baking soda
- 1 t salt
- 1/2 c cocoa
- 1 c whole wheat flour
- 3/4 c white flour
- 1 c M&Ms (or something delicious and vegan)
Instructions:
- With a mixer or by hand, cream the first 4 ingredients until smooth.
- Stir in remaining ingredients.
- Cover two baking sheets with parchment. Drop 12 balls of dough on each sheet.
- Bake at 350 degrees for 16 minutes.
