Amazingly Retro Lentil Burgers

Dear Turkey,

This is the kind of
Thing my parents used to eat
In the seventies


Amazingly Retro Lentil Burgers
(makes 6-8, adapted from the original Moosewood Cookbook)

Ingredients:
- 2 cans lentils, rinsed and drained (or feel free to boil up some dried ones)
- 1 tiny can tomato paste
- 2 shallots, diced
- 1/2 c breadcrumbs (I used matzo meal)
- 1/2 c chopped walnuts
- 1 t garlic powder
- 1 t chili powder
- 1 t dried mustard
- 1/2 t salt and pepper
- 2 eggs
- toppings: lettuce, hummus, feta, tzatziki (I just mixed up 1.5 c whole milk plain yogurt, 1/2 c diced cukes that I didn't even bother peeling, 1 T each fresh parsley, chives, and mint; a dash of salt and garlic powder, 2 T lemon juice [I used jarred])

Instructions:
- Mash all of the burger ingredients together. Use your hands to make patties and chill the patties for at least 30 mins. 
- Grill them, or broil them on a cookie sheet covered with oiled foil for 5-6 mins/side.
- Serve with buns and cheese or as a salad. The cooked patties keep very well in the fridge and freezer and you can just warm them up in the microwave.
