Amish Soup
(serves 10)
Ingredients:
- 1 potato
- 1 sweet potato
- 3 carrots
- 3 celery stalks
- 1 onion
- 3 leeks
- 1 c peas (I used frozen)
- 1 c corn (I used frozen)
- 6 c tomato juice (the 100% juice kind that has salt added)
- 2 T honey
- 4 T olive oil
Instructions:
- Chop the veggies (don't bother peeling them) as small as you want for soup.
- Saute everything except the frozen veggies and the juice in a big pot for about 10-15 mins, stirring often, until things start to give up their liquid and get a little tender (it may not take that much time, and that's fine).
- Add the juice and simmer, covered, until the potatoes are tender, maybe another 10 or 15 mins. Stir occasionally.
- Add the frozen veggies and heat through.
- If you want a truly amazing soup experience, top with kimchi.
