My mom had tons of
Celery, so I made this
Amazing dinner
Celery Gratin!
(serves 4, adapted from here)
Ingredients:
- 8-12 stalks of celery, cut up small (but not diced, just sliced if you know what I mean) with the bottom part and the leaves removed
- 3/4 c shredded parm
- 1/2 c heavy cream
- pinch of salt and pepper
- about 1/3 c bread crumbs (I used panko)
Instructions:
- Combine the first 4 ingredients in a bowl and mix well. Divide between 4 ungreased ramekins (or just use a big baking dish or a loaf pan if you don't have ramekins).
- Put the ramekins on a cookie sheet and cover them with foil. Bake at 400 F for 40 mins.
- Remove from the oven and uncover. Sprinkle each one generously with breadcrumbs and bake for another 10 mins, uncovered.
- Let stand 5 mins and serve.
