White Bean and Lemon Crostini

Dear Turkey,

What's a crostini?
I think it's bread that you toast
With some stuff on it?


White Bean and Lemon Crostini
(serves 2, adapted from here)

Ingredients:
- 1 can white beans (I used cannellini), rinsed and drained
- 1/8 c olive oil
- about 1/4 c lemon juice (bottled is fine), or to taste
- 1/4-1/2 t garlic powder, or to taste
- dash salt and pepper
- 1 t thyme (dried is fine)
- bread and parm (optional), for serving

Instructions:
- Combine the first 6 ingredients in a bowl and use a masher/pastry cutter/fork/immersion blender/whatever to mash/chop everything together until it's mostly smooth (don't go nuts). Stir well and season to taste, adding more lemon if you want (I like lots of lemon).
- Spread a nice thick layer of the bean mixture on some slices of bread and sprinkle with some parm. Toast until the bread is nice and brown. Sprinkle with fresh herbs or drizzle with some more olive oil if you want.
