Magical Microwave Pumpkin Spice Personal Mug Cake

Dear Turkey,

Yes, it works: you just
Put everything in a mug
And microwave it

Magical Microwave Pumpkin Spice Personal Mug Cake
(serves 1 [duh], adapted from here)

Ingredients:
- 1/4 c flour (I used white whole wheat) [for a chocolate version: omit 1-2 T flour and add an equal amount of cocoa. You can also omit the pumpkin pie spice if you want]
- 1/2 t pumpkin pie spice (or some pinches of cinnamon, ginger, nutmeg, cloves, etc.)
- 1/8 t baking powder (yes, you need it)
- pinch salt
- 1-2 T maple syrup (2 will make it very sweet)
- 2 T milk (I used soy unsweetened)
- 1.5 T plain pumpkin puree (like from a can -- I took what I didn't use, froze it in an ice cube tray, popped the cubes into a ziplock bag, and stored them in the freezer for future pumpkin projects, or for ice cubes in an iced pumpkin latte)
- 1 T oil or butter (I used solid coconut oil)
- 1 T chocolate chips

Instructions:
- Mix everything in a decent-sized mug until just combined. Microwave, with a loose cover, for 60 seconds. If it looks too gooey (not that that's a bad thing), continue microwaving for 30-second increments until it's as done as you want.
- I cooked mine to a real cake-like texture so I could pop it out of the mug onto a plate -- this is purely optional. You might want it more like pudding.
- Serve immediately and top with whipped cream, ice cream, cinnamon, whatever.

Enjoy,
Tofu
