Chocolate Olive Oil Cake

Chocolate Olive Oil Cake
(adapted from smitten kitchen)

Ingredients:
- 1.5 c flour
- 3/4 c cocoa
- 1.5 t baking soda
- 1/2 t salt
- 3/4 c sugar
- 3/4 c brown sugar
- 1/2 c olive oil (the good stuff, even if it's really green and fruity)
- 1.5 c water or coffee (I used water)
- 1 T vinegar (I used cider but white would work too)
- For the glaze: 3/4 c chocolate chips, 2 T cocoa, 3 T olive oil, 1 T light corn syrup, large pinch salt

Instructions:
- Generously oil a pie dish with olive oil. 
- Combine the dry ingredients in a bowl, including the sugars. Whisk in the remaining ingredients just until smooth. 
- Bake at 350 F for 30-35 minutes or until the top springs back when pressed. Cool at least 10 minutes and remove from the pie dish.
- When the cake is cool, microwave the glaze ingredients, stirring every 30 seconds, until combined. Drizzle/spread/pour over cake.
