Black Beans, Green Peas, and Yellow Tomatoes

Dear Turkey,

A Mexican lunch
Was cancelled; I took matters
Into my own hands


Black Beans, Green Peas, and Yellow Tomatoes
(serves 1)

Ingredients:
- 1 c canned black beans, rinsed and drained
- 2/3 c peas (I used frozen -- no need to thaw)
- 8 small yellow tomatoes, halved
- 1 T olive oil
- 1-2 T honey
- 1 t cumin
- 1/2 t turmeric
- 1 t dried minced garlic (or whatever you have), I used this stuff
- 1 T orange or lemon juice
- Chipotle Tabasco
- Rice and cheese, and more Tabasco, for topping

Instructions:
- Combine the oil, honey, turmeric, cumin, and garlic in a medium size pan. Heat on medium/high heat until the garlic starts to smell amazing, 1-2 minutes. 
- Add the black beans, juice, and some Chipotle Tabasco to taste. Cook another 2 minutes, stirring, until the liquid starts to cook off. 
- Add the peas and tomatoes and cook just until the peas are tender. 
- Serve with rice and cheese, and more Tabasco.
