Chocolate Chip Shortbread with Sea Salt

Dear Turkey,

Butter, sugar, and
Chocolate -- this is what my mom
Would call a cookie

Chocolate Chip Shortbread with Sea Salt
(makes 24, adapted from Smitten Kitchen)

Ingredients:
- 1 c + 2 T salted butter, cold but preferably not frozen
- 1/2 c sugar
- 1/4 c brown sugar
- 1 t vanilla
- 2 1/4 c flour
- 1 c chocolate chips
- sea salt or another big-grained salt

Instructions:
- In an electric mixer, cream the sugars, butter, and vanilla. Beat in the flour until just combined. If your butter is really cold and the dough just isn't coming together, drizzle in a little very hot water while you're mixing. Mix in chocolate chips.
- Form the dough into a log and chill until the log is sliceable (this took me about 20 minutes in the freezer).
- Cover 2 baking stones with parchment and slice the log into 24 slices, distributing them equally over the 2 stones. Sprinkle each cookie with a few grains of salt (okay, maybe a little more than a few).
- Bake at 350 F for 18 minutes. Cool completely and store at room temperature.

Enjoy,
Tofu
