Surprising Carrot, Coconut, and Nut Cookies

Dear Turkey,

Yeah, it's not what I'd
Put in a cookie either,
But just trust me here


Surprising Carrot, Coconut, and Nut Cookies
(makes 24, adapted from the great 101 cookbooks)

Ingredients:
- 1 c flour (I used whole wheat pastry)
- 1 t baking powder
- 1/2 t salt
- 1 c oatmeal, any kind
- 2/3 c chopped nuts (I used pecans), or raisins
- 1/2 c maple syrup
- 1/2 c solid coconut oil
- 1 t ginger (ginger powder from a jar is fine)
- 1 c shredded carrot

Instructions:
- If your maple syrup and coconut oil aren't warm, start by warming them in the microwave until the coconut oil melts. Stir in the remaining ingredients, ending by folding in the carrots and nuts.
- Cover 2 baking sheets with parchment paper and spoon 12 drops of dough onto each sheet. This is a wet dough, almost a batter. 
- Bake at 375 F for 10-12 minutes. It's okay if the tops seem very soft and the bottoms are starting to get brown. Let stand on the baking sheets for a few minutes before removing.
