Bean and Slaw Sliders

Dear Turkey,

Vegetarians
Don't usually get to
Eat things called sliders


Bean and Slaw Sliders
(serves 4, adapted from budget bytes)

Ingredients:

For the beans:
- 1 T olive oil
- 1/3 c diced onion (frozen is fine, no need to defrost)
- 1 t minced garlic, jarred is fine
- 1 can black beans, rinsed and drained
- 1 can pinto beans, rinsed and drained
- 1/2 c bbq sauce
- 1/2 t smoked paprika
- salt and pepper
- 4 sandwich buns of your choice 

For the slaw:
- about 7 oz shredded coleslaw mix (about 1/2 bag)
- 2 green onions, cut up small with scissors
- 1/2 T honey
- 1/3 c plain yogurt (I used whole milk, you can also use a vegan yogurt or mayo, or skip this altogether and make a vinegar slaw)
- 1-2 t dijon mustard
- 1-2 t cider vinegar
- salt and pepper

Instructions:
- For the slaw: combine all ingredients except the slaw and the green onions in a small bowl until smooth. Pour over slaw and green onions and toss well. 
- For the beans: heat the oil, garlic, onion, and spices and cook, stirring, until the onion starts to become translucent. Add the beans and the bbq sauce and simmer, stirring occasionally, for 5 minutes. Season to taste. 
- To serve: put equal parts slaw and beans on each bun. Provide forks and knives, because it's messy!
