Honey Roasted Chickpeas

Dear Turkey,

Not super sweet, and
A little bit salty, I
Can't stop eating them


Honey Roasted Chickpeas
(makes about 1-2 c, so feel free to double or triple the recipe -- they keep well)

Ingredients:
- 1 can chickpeas, rinsed well and drained on paper towels for a few minutes
- 1 T olive oil
- 1 T honey
- sea salt
- cinnamon

Instructions:
- Cover a cookie sheet with parchment paper and spread the chickpeas over it in one layer. Bake at 375 F for about 40 minutes, or until they are dry and crunchy when you taste one.
- Put the chickpeas in a bowl and toss with the oil and honey, and a few generous sprinkles of salt and cinnamon (or whatever spices you want). 
- Return to the cookie sheet and bake another 10-20 minutes, until they start to turn brown. Cool completely and store at room temperature in an airtight container.
