No Knead Bread to Impress Your Friends

No Knead Bread to Impress Your Friends
(adapted from the classic NYT recipe)

Ingredients:
- 3 c flour (I used white)
- 1 t yeast
- 1 1/2 t salt
- 1 5/8 c room temperature water

Instructions:
- In a big bowl, combine flour, salt and yeast. Knead in the water with your hands just until a shaggy dough forms. Cover and store up to 18 hours at room temperature or up to 24 hours in the fridge.
- About 3 hours before you're ready to eat, knead the dough a few times with well-floured hands. If it's been in the fridge, you can work with it cold. Make the dough into a ball and place it on a well-floured surface and cover (I just inverted the bowl on top of it). Let it rest about 1-2 hours, or until doubled. 
- Preheat a dutch oven with a lid, or another oven-safe pot to 450 F (if you don't have a lid, just use foil). Form the dough into a loose ball and place it on a well-floured piece of parchment. Put it, parchment and all, into your hot pot. Before you close the oven door, throw an ice cube into the bottom of the oven and shut the door quickly. 
- Bake for 30 minutes with the lid on, and then another 15-30 minutes with the lid off, until it's just past golden brown and sounds hollow when thumped. If you're not sure, bake it 5 minutes more. Cool completely.
