Healthy and Amazing Chocolate Chip Blondies

Dear Turkey,

I promise you won't
Detect the chickpeas when they're
Out of the oven

Healthy and Amazing Chocolate Chip Blondies
(makes 8-10 brownies, adapted from here)

Ingredients:
- 1 can chickpeas, rinsed well and drained
- 1/3 c creamy pb (I used natural)
- 1/3 c maple syrup
- 2 t vanilla
- 1/4 t cinnamon
- 1/4 t baking soda
- 1/4 t baking powder
- 1 T flax or chia seeds, whole or ground, + 1/3 c warm water
- 1/3 c chocolate chips
- nuts (I used pecan halves) and more chocolate chips, for sprinkling

Instructions:
- In your food processor (yes, you need it), combine everything except the chocolate chips and nuts and process until smooth. If you're not sure, do it for another minute. Stir in the 1/3 c chocolate chips.
- Line an 8x8 baking dish or a similar dish (I used a cast-iron pan) with parchment. Pour in the batter and smooth it out a bit. Sprinkle the nuts and additional chocolate chips on top.
- Bake at 350 F until the sides are starting to brown and the middle is getting spongy. This could take between 20 and 40 minutes, depending on your pan. If you're not sure, bake it a little more. Cool and slice. Freeze if you like.

Enjoy,
Tofu
