Zucchini Tots

Dear Turkey,

Buying zucchini


Zucchini Tots
(serves 4 as an appetizer)

Ingredients:
- 1 med/large zucchini, grated (I think it's worth it to take out the food processor), with the excess moisture squeezed/drained out
- 2 c shredded cheese (I used monterey jack)
- 3 eggs
- 3/4 c - 1 c panko or breadcrumbs of your choice
- generous pinch salt and pepper
- 1/2 t garlic powder
- tomato or BBQ sauce for dipping

Instructions:
- Combine all ingredients except the dipping sauces and stir until uniform. 
- Cover 2 baking sheets with parchment paper and drop 12 tots onto each one. If you have time, let them stand for about 30 minutes.
- Bake at 400 F for 25-45 minutes, or until the tops are golden brown. This will depend on the size of your tots and the water content of your ingredients.
- Serve with dipping sauces.
