Pumpkin Chocolate Chip Cookie Dough Truffles

Dear Turkey,

Remember when we used to eat cookie dough out of the package when we were kids? This is kind of like that, and just as awesome (plus, you don't have to worry about salmonella). I can't wait to take these to every holiday party I'm going to this year (which, at the time of this posting, is two -- maybe I'll be invited to more now).


Pumpkin Chocolate Chip Cookie Dough Truffles
(adapted from minimalist baker)

Ingredients:
- 2.5 c flour
- 1 t salt
- 2 sticks butter, melted
- 2/3 c sugar
- 2/3 c brown sugar
- 1 t vanilla
- 4 T milk of your choice
- Scant 1/2 c canned pumpkin (try to scoop the least liquid-y part if you can)
- 3 t pumpkin pie spice (or whatever you have)
- 3 c chocolate chips, divided

Instructions:
- Cream butter and sugars and then mix in other ingredients, except for 2 c chocolate chips.
- Chill for a few minutes and then form into 24 balls. Place balls on 2 wax paper-lined cookie sheets. Chill for about an hour.
- Melt remaining chocolate chips in the microwave and roll each ball in the melted chocolate until coated, putting them back on the wax paper and sprinkling with salt. Chill until chocolate is hard.
