Use Up Your CSA Cabbage Soup

Dear Turkey,

Your neighbor is wondering if you ever used up the rest of that cabbage from her CSA that she gave you in December. Luckily for you, cabbage keeps a long time.

I have never made a good cabbage soup before. This soup is so easy, so good, and so healthy, you would think that I or my stomach would be sick of eating it for three days straight. Not at all. I also froze some for later. It's really good with a big piece of pumpkin sourdough.


Unbelievably Good CSA Cabbage Soup
(serves 6 with some to freeze)

Ingredients:
- 1/2 of a large cabbage, sliced
- 2-4 carrots, sliced
- 1 large red onion, sliced
- 5 T olive oil
- salt and pepper
- 2 T caraway seeds
- 2-3 c veggie broth
- 1 big can of diced tomatoes, undrained

Instructions:
- Heat the oil, cabbage, carrots, onion, and spices on medium heat and cook for about 10 minutes, stirring often, until the cabbage starts to wilt and veggies brown slightly.
- Add the tomatoes and broth and simmer, covered, until the veggies are tender, about 10 more minutes.
- Season to taste.
