Cranberry Orange Biscotti

Dear Turkey,

It's like Thanksgiving
Got stuck in a biscotti,
At least the sweet parts


Cranberry Orange Biscotti
(makes about 16, adapted from Vegetarian Times)

Ingredients:
- 2.5 c whole wheat flour
- 2 t baking powder
- 1/4 t salt
- 3/4 c orange juice
- 1/4 c cornstarch
- 1/2 c sugar
- 2 T canola oil
- 1 t almond extract
- 1 t vanilla extract
- 1 c dried cranberries
- 1 c nuts (I used chopped walnuts)

Instructions:
- Beat sugar, orange juice, oil, and extracts (I just used a whisk). Beat in cornstarch.
- Stir in remaining ingredients (do the berries and nuts last) and knead with hands until a ball forms.
- Cover a baking sheet with parchment paper and form 2 logs out of the dough and place them on the parchment. 
- Bake at 350 F for 35 minutes. Cool and slice into about 16 pieces.
- Bake for 10-20 more minutes (depending on how crunchy you like them).
