Pumpkin Chia Pudding
(serves 5-7, adapted from here)
Ingredients:
- 2 c soy milk (I used vanilla)
- 1 regular-size can pumpkin
- 1/4 c + 1.5 T chia seeds
- 1/4 c brown sugar
- 3 t cinnamon
- 1/2 t nutmeg
- 1/2 t ground ginger
Instructions:
- Combine everything and stir until the chia seeds are well distributed.
- Portion out into cute ramekins or jars (or tupperware). I made 6 half-cup portions.
- Cover and chill for at least 2 hours.
