Caramel Shortbread Layer Cookies

Dear Turkey,

I don't often go
For fancy cookies, but these
Are really worth it


Caramel Shortbread Layer Cookies
(makes 40, adapted from here)

Ingredients:
For the cookie layer:
- 2 c flour
- 2 t baking powder
- 1/4 t salt
- 2 stick butter, fridge or room temp
- 1/2 c sugar
For the caramel layer:
- 1 stick butter
- 1/2 c sugar
- 2 T light corn syrup
- 1 14-oz can sweetened condensed milk
For the chocolate layer:
- 1.5 c chocolate chips
- 1 t light corn syrup
- 1 stick butter
- Kosher or sea salt, for sprinkling

Instructions:
- Combine the cookie ingredients in the food processor and process until a ball forms. Line a 9x13 baking dish with parchment and press the dough into it. Bake at 325 F for about 20 mins or until it's just barely starting to get brown.
- For the caramel, melt everything on low/medium heat and cook at a very slow boil, stirring often, until it gets a bit darker and starts to thicken up. This took me about 10 mins, but, when it happened, it happened all at once.
- Pour the caramel over the cookie layer and let it cool for at least 10 mins.
- Melt the chocolate layer ingredients in the microwave, stirring if need be, and pour over the caramel layer.
- Sprinkle with salt.
