When someone offers
You a leek, don't ever say
No, just make this rice
Leek Fried Rice
(serves 2)
Ingredients:
- One leek that someone has left over from her CSA, washed and sliced into 1/4 inch rounds
- 3 c cooked rice (I used brown)
- 2 T olive oil
- 2 T rice vinegar
- 2 T lemon juice (I used the kind from the bottle)
- 1 t sriracha or tabasco sauce
- 1 T ground cumin
- 1 T garam masala or curry powder
- salt and pepper, to taste
Instructions:
- Heat the oil, spices (including sriracha), and leek on high heat.
- When it gets hot, add the vinegar and lemon juice and cook for another minute until everything starts to smell amazing.
- Stir in the rice and let it soak up everything. Cook, stirring, for another couple of minutes.
