Filled Muffins

Dear Turkey,

You could also call
These "healthy twinkies" and eat
A few for breakfast


Filled Muffins
(makes 12)

Ingredients:
- 1/4 c water + 1 T flax or chia (whole or ground)
- 1/3 c brown sugar
- 1/4 c canola oil or yogurt (I used canola)
- 1/2 c sour cream, yogurt, or cottage cheese (I used full fat, plain yogurt)
- 2 t vanilla
- 2 mashed bananas or 1/2 can pumpkin
- 1/2 c white flour
- 1/2 c whole wheat flour
- 1/2 t baking powder
- 1/2 t baking soda
- 1/4 t salt
- 1/4 c chocolate chips
- 4 oz cream cheese
- 1/8 c white sugar
- 3 T flour

Instructions:
- For the muffins: mix together the first 11 ingredients (through and including the salt). Line a muffin tin with muffin papers and divide the batter evenly in it. 
- For the filling: mix the final 3 ingredients and place a dollop on top of each muffin. 
- Sprinkle the muffins with chocolate chips (you'll see in my photo that I did an assortment of filled, unfilled, chocolate, etc.).
- Bake at 350 F for 20-22 minutes.
