Boba with Soy Milk, Maple Syrup, and Chocolate Foam

Boba with Soy Milk, Maple Syrup, and Chocolate Foam
(serves 1)

Ingredients:
- 1/3 c cooked tapioca pearls (I use the instant ones that cook in 10 minutes, but regular tapioca is also fine), mixed with enough maple syrup to prevent sticking (plus a little extra maple syrup for drizzling), room temperature 
- 1 c milk of your choice (I used soy unsweetened)
- 1-2 t cocoa, either sweetened or unsweetened, plus more for sprinkling

Instructions:
- Place the boba and syrup in the bottom of your glass. Fill the glass about 2/3 full with the milk. Pour an additional ring of syrup around the top of the milk and let it run down towards the boba. 
- Using a milk frother, whisk, or jar with a tight-fitting lid, foam about 1/4 c milk (with some cocoa in it if you want). Pour the foam over the milk in your glass. 
- Sprinkle with more cocoa and enjoy.
