You won't believe there's just a
Quarter cup sugar
(makes 12)
Ingredients:
- 2 ripe bananas
- 1 c berries (I used frozen blueberries)
- 3/4 c yogurt (I used plain 2% Greek yogurt)
- 1/4 c sugar
- 1 t vanilla
- 1/2 t cinnamon
- 2 c white flour
- 2 t baking powder
- 1/2 t baking soda
- 1/4 t salt
- 4 T cold butter
- 1/4 c milk (I used unsweetened soy)
Instructions:
- Combine dry ingredients and then cut/chop/mash the butter and bananas into the mixture. It's okay if small chunks of butter remain.
- Add remaining ingredients except for the milk. If the dough is really dry and isn't coming together, add the milk 1 T at a time. Mix until just combined.
- Drop 12 scones onto a cookie sheet covered with parchment paper. Sprinkle with sugar. Bake at 425 degrees for 25 minutes, or until the tops start to brown.
