Grown Up Mac and Cheese
(serves 1)
Ingredients:
- 1 c pasta, cooked al dente (I used elbows)
- 1/4 c shredded cheese (I used cheddar for that comfort-food taste, but you could use something fancy)
- 2-3 T lemon juice
- pinch salt and pepper
- 1 T butter
- a few T fresh herbs of your choice (or about 1 t dried), I used thyme, tarragon, basil
Instructions:
- While the pasta is cooking, combine the remaining ingredients in your bowl (this way you don't have to do too much pot-washing).
- Drain the pasta, but let a bit of the pasta water make it into your bowl when you pour the pasta in.
- Stir to combine and melt butter; stand 5 minutes.
