One of my friends doesn't like umami foods. I know. She didn't even know what umami was. The fact that we are still friends is a testament to her awesomeness in all other areas.
The other day at lunch with our co-workers, this friend said, "Tofu, I think that we are at the point in our relationship where you can invite me over for dinner and cook for me." It was right at one of those moments when all other conversation had ceased, and everybody laughed. Well, Umami-hating Friend, I will have you over for dinner, but not for this awesome dish.
Umami Sensation Vegan Sweet and Spicy Baked Tofu
(serves 2 hungry people)
Ingredients:
- 1 cake extra-firm tofu (I used Trader Joe's), pressed for a few minutes wrapped in paper towels under something heavy, like a big can
- 1 serrano, minced (remove seeds if you're a chicken)
- Juice of 2 limes
- 1/4 c sauce of your choice (I used Trader Joe's Gyoza Sauce)
Instructions:
- Slice tofu into long, thin strips (see picture).
- Cover a cookie sheet with parchment and arrange tofu on it in one layer.
- Squeeze the limes over the tofu, sprinkle with the serrano, and drizzle the sauce over that.
- Bake at 425 degrees for 30 minutes, until your house smells awesome and you're afraid it's going to burn.
- Serve with wild rice with lime and salt, siracha, chives, soy sauce, and more Gyoza sauce.
Enjoy,
Tofu
