Beet Chips

Dear Turkey,

Problem: all of your friends are overwhelmed by their CSA shares. You just can't leave their houses without graciously accepting giant cabbages, onions, radishes, and beets. Ah, the bounty.
One week later: you really need to do something with those beets so that you can make room in your fridge for the things that you actually bought.*

Solution: Beautiful, Sweet and Salty Beet Chips that Look Like Rose Petals (bonus)




Ingredients:

- a sharp knife
- time and NPR
- beets
- salt

Instructions:

- scrub the beets
- slice them as thinly as you can, like, paper thin -- entertainment or Zen state of mind required
- spread them out one layer thick on parchment-covered cookie sheets
- salt them lightly
- bake at 375 degrees for 20-30 mins, watching required, don't use the bottom half of your oven or they will burn!

Analysis:

These are beautiful and tasty. You can buy them but they are expensive. However, time is money and time and skillz are required for this project.  However, it's a good way to make 4 or 5 beets disappear. Your call.
