I know I've been posting a lot lately; you'll probably have to start skimming my posts just to keep up with them all. But I just couldn't wait to write about something that we both love. No, it's not me, it's Pumpkin Chocolate Chip Bread (PCCB). As I said earlier, I have several versions of this classic. Yesterday I made the "unhealthy" version, because I got some eggs as a present.
|now THESE are eggs; I know the farmer and the names of the hens (actually she just confessed to me that the hen names are all runners up for what she named her daughter); and there is the convenient choose-a-size option, as you can see.|
I pretty much put everything in a bowl and mix it up. Bake 350 for 1 hour in a greased pan:
3.5 c flour (whole wheat ok)
2t baking soda
2c (1 regular size can) pumpkin
mini chocolate chips (I usually use the whole bag, but, you know, I love chocolate...)
Attn coworkers: it is your lucky day since this is obviously not on my husband's diet.
